kari kepala ikan enak restoran zk <b>di</b> jalan kg. attap <b>kuala lumpur</b> Posted: 28 Jan 2014 05:55 PM PST Kari kepala ikan sudah terlalu sinonim dengan Restoran ZK, terletak di 76, Jalan Kampung Attap, Kuala Lumpur. Premis ini juga lebih dikenali sebagai 'Restoran Kari Kepala Ikan Kg. Attap' di kalangan ribuan pelanggan tetap. "Tatkala berusia 12 tahun, saya mula bekerja di restoran di Ipoh, Perak, membantu menghantar makanan kepada pelanggan. Di situ juga saya melihat dan mula mengkaji bagaimana cara memasak kari kepala ikan enak. Sepuluh tahun kemudian saya berhijrah ke Cheras, Kuala Lumpur, menyewa tapak perniagaan di restoran Cina dengan kadar RM5 sehari," ujar pemilik Restoran ZK, Haji Zabarullah Khan Kader Mydin, 64 tahun. Saya dapati, beliau, insan begitu merendah diri ketika berbicara.
"Apakah rahsia di sebalik kari kepala ikan sedap disediakan?," soal saya kepada ayah tiga anak itu. "Kepala ikan harus segar. Bagi memastikan kesegaran setiap kepala ikan, kira-kira jam 8 pagi, saya sendiri pergi ke pasar untuk memilih hanya kepala ikan jenahak dan merah terbaik dihidangkan kepada pelanggan. Saya kongsikan satu petua bersama Mazidul. Kalau hendak membeli kepala ikan merah, pastikan tiada jalur kuning di bawah mata ikan itu. Jika ada, daging kepala, liat," jelas beliau. Saya diundang oleh Zabarullah tatkala beliau membeli kepala ikan di Pasar Seksyen 6, Shah Alam, Selangor. "Selain daripada Pasar Seksyen 6, bekalan ikan juga dihantar oleh peniaga Pasar Pudu, Pasar Klang dan Pelabuhan Klang. Lazimnya kepala ikan saya beli berharga di antara RM20 dan RM30 setiap satu. Berat keseluruhan ikan harus lebih daripada 3 kilogram, jadi kepala tidak akan mudah hancur tatkala dimasak. itu antara petua berguna," tambah Zabarullah. Zabarullah berbeza berbanding ramai pemilik restoran lain. Beliau memasak sendiri kari kepala ikan direstorannya. "Memasak kari kepala ikan, hobi saya. Bukan sukar kerana semua bahan telah disediakan oleh pekerja. Kacang bendi, tauhu kering dan tomato antara bahan saya gunakan. Lendir bendi berfungsi memekatkan lagi kuah kari manakala tauhu kering pula menyerap lebihan minyak di dalam kuah. Apapun, hirisan bawang besar ditumis sehingga naik bau, curahkan kuah kari dan tunggu sehingga menggelegak sebelum kepala ikan dimasukkan satu persatu ke dalam periuk," terang datuk kepada lima cucu terbabit. Restoran ZK beroperasi seawal jam 6.30 pagi, menghidangkan sarapan. Jam 10 pagi, restoran ditutup buat sementara waktu untuk pekerja membersihkan lantai premis terbabit. "Selain kualiti makanan, aspek kebersihan sentiasa diberikan perhatian khusus demi menjamin keselesaan semua pelanggan. Tepat jam 11 pagi, kari kepala ikan mula dijual," ujar Zabarullah. Purata, 500 pelangggan berkunjung ke restoran ini setiap hari. Restoran ZK beroperasi sehingga jam 4 petang setiap hari dan ditutup pada hari Ahad. "Kami semua bertugas di Sudan. Akibat pergolakan dan pertelingkahan dua etnik utama di sana, majikan mengarahkan kami pulang ke tanahair buat sementara waktu. Saya dan rakan teringin untuk makan kari kepala ikan. Restoran ZK menjadi pilihan kami kerana layanan mesra dan kari kepala ikan amat sedap dan menepati citarasa semua," ujar Azizi Abdul Ghani. "Kari kepala ikan di sini dimasak tanpa santan dan boleh dimakan segar dalam tempoh 24 jam. Harga kepala ikan di antara RM15 dan RM90, boleh dimakan di antara dua dan 7 orang, mengikut saiz. Sebilangan pelanggan saya, membawa pulang juadah ini ke Sabah, Sarawak, Singapura dan London, United Kingdom. Kari kepala ikan dimuatkan di dalam bekas plastik dan beg kertas. Alhamdulillah, ramai juga golongan kenamaan makan di restoran ini," kata Zabarullah. Anak bongsu Zabarullah, Badrulzaman, 23 tahun, biarpun sibuk bertugas sebagai juruterbang, tetap ringan tulang pada waktu terluang, melayan pelanggan bertali arus berkunjung untuk menjamu selera. "Setelah lebih 20 tahun meraih rezeki di sini, saya berharap Badrul akan menjadi pewaris perniagaan kari kepala ikan. Sebagai taukeh, kita umpama tiang utama bangunan. Tanpa tiang itu bangunan bakal runtuh. Justeru saya sentiasa cuba berada di restoran ini untuk melayan pelanggan. Pelanggan datang dari jauh dan dekat, membawa wang bersama mereka, membayar bil dan menguntungkan syarikat. Oleh itu setiap pelanggan seharusnya diberikan perhatian istimewa," jelas peniaga bersifat merendah diri itu lagi. Ketika itu Zabarullah sibuk menuangkan madu asli ke dalam kuah tambahan hidangan ayam madu, antara juadah utama di Restoran ZK, selain daripada kari kepala ikan. "Saya membeli stok madu asli dari pembekal di Pahang. Jadi ayam madu tidak dicampur gula untuk menjaga kesihatan pelanggan," tambah beliau. Sehari selepas kisah Restoran ZK dipaparkan di Majalan 3, siaran 20 Januari 2014, ribuan pelanggan menyerbu premis itu.
